Yummy Sunday: Prawns in Coconut Milk and Lemongrass

This is my first attempt at this mouthwatering dish, Guinataang Ulang or Prawns in Coconut Oil and Lemongrass. I had to estimate most of the ingredients as I only asked around for the cooking process.  It was fun to do, and satisfying when my family absolutely enjoyed the meal!  Careful not to put too much Sprite, as it will sweeten the dish too much.

Here's the recipe:

1.  1/2 kilo prawns

2. 1 medium sized coconut, grated (at the market)

3. Onion, garlic, ginger

4. Salt to taste

5. Oil

4. Sprite

5. Lemongrass (tied)

Procedure:

1. Prepare coconut milk by adding 1 cup lukewarm water to the grated coconut and straining water and coconut through a strainer or cheesecloth.  Set aside the first strain only.

2.  Soak prawns in sprite.  Set aside.

3.  Sautee the prawns in garlic, onion and ginger.  Add salt to taste.

4.  When the prawns turn an orange color, add Sprite, coconut milk.

5.  Wait until the coconut oil turn a yellowish color, add the lemon grass.

6.  Let simmer for about 3-5 minutes.

Enjoy your meal!
